The process

How to start a jerky or meat stick brand: nine stages, concept to production

Take the whole journey or just the stage that’s giving you trouble. New brands usually start at 01; existing producers jump in wherever they need help. Either way, we can work alongside you at the stages you need.

Validation, food safety plan, and label topics are handled case by case.

Product troubleshooting can start at any stage — it’s often where existing producers come in. About troubleshooting →

01

Concept & formulation

Stick or jerky, whole-muscle or ground and formed, flavor and texture target. We help you turn the idea into a formula that has to run on a real line — what has to be true in the meat, what the process will allow, what the label can honestly say.

02

Cure & clean-label options

Conventional cure or a clean-label approach — we help you weigh the trade-offs in flavor, color, process, and what the label can honestly say. No cure levels or claims are published here; numbers come from the work.

03

Sourcing, spices & co-manufacturer match

Raw material specs, spice and casing questions, and — if you are not running your own plant — we take you all the way through the co-manufacturing process. Zach can act as your operations agent with the co-man.

04

Validation & shelf-stability support

Water activity, pH, the heat path, and shelf stability have to be shown, not assumed. We help you get the process description and data together, and help you make sense of what comes back. Handled case by case.

05

Food safety plan & label prep

We help you organize your food safety plan and get your label materials ready for your own review. Handled case by case.

06

Pilot runs

We run pilot runs to find out where the formula and the process disagree before production does it for you. What changed, what held, and what to adjust in the spec.

07

Scale-up

Bench to production without the product drifting: batch size, grind, mix, stuff or slice, dry, and the steps nobody wrote down. We work with you so the next lot can match this one as closely as possible.

08

Equipment & line setup

Smokehouse, dryer, stuffer, slicer, packaging line — we set up lines on site and advise remotely on what the product needs from the equipment and the layout. No equipment brand endorsements here.

09

Production & QA launch

First production lots, QA checks, records, and a spec you can hand to the next shift. Packaging that lets the product survive the package and the shelf. We support your launch; the plant and the records stay yours.
