Formulate a meat product the way FormuCraft does
Build a formula on a starred meat block, scale it to a batch with pre-weighed seasoning and cure bags, run a water-activity hurdle screen, and read the Nutrition Facts panel. The math is the same as the iPhone & iPad app. Nothing you enter here is saved or sent anywhere.
The water-activity estimate and hurdle screen are an R&D screening aid only — not a compliance or shelf-life determination.

Cook/dry loss is water driven off; it concentrates nutrients and lowers aw. Process yield is handling loss (trim, breakage, purge) and doesn't change composition. Don't enter the same loss in both.

Per 100 g finished product
Water is shared between the protein/starch/fiber matrix (GAB sorption isotherms) and a solution of the salts and sugars (Robinson–Stokes for NaCl, Norrish for sugars, combined by Ross's equation). The aw that balances the water is the estimate (Salwin–Slawson). Cook loss is treated as water only, so rendered fat or purge makes the estimate read low. Confirm with an aw meter.
Process & measurements
pH isn't predicted: it depends on buffering and fermentation that ingredient composition doesn't capture. Enter a measured or target pH (0 = unknown).

Pre-weighed spice units
Spices, herbs, sugars, flavors and cure accelerators go in a Seasoning bag. Nitrite cure always gets its own bag, because nitrite and erythorbate/ascorbate react when premixed. Base, water/ice, liquids, encapsulated acids and anything over 6% of the batch are left out.
Cure
ppm of sodium nitrite on the green meat-block weight (flagged base meat, or meat lines by name).
